Sometimes you want something easy and other times, you want to pretend you are on the next Food Network show. You’ll be able to find meals for any mood, but there is no shame in grabbing the closest box of cereal and calling it a good night.

Sausage Risotto
It’s a labor of love but definitely worth it in the end. It is also in grams which can cause some conversion issues if you don’t have a food scale. I was able to covert, and if it was a messy conversion, always round up (especially with the wine).

*I used chicken sausage instead.

*When it is done cooking, throw some arugula in to welt before serving.

Italian Quinoa Soup
This is hearty and delicious. It makes a HUGE amount so either plan to be eating it for a while or get some family/friends to enjoy it with you.

*I left out the celery and added extra carrot. Make sure that the carrot is in even, relatively small chunks so they can cook evenly.

*You don’t have to chop the spinach but I would take off any long stems.

*Throw some of that parmesan in there with the cream. Life’s too short to not add extra cheese.
