Lunch

Since I have a tendency to skip breakfast and move straight to lunch (ya ya, breakfast might be the most important meal of the day but my schedule is: breakfast at 11, lunch at 3, dinner at 7. Sorry die hard breakfast fans.) this will definitely be my largest category. Pick a recipe, go grocery shopping (with your face mask), and lets get cooking.

Chickpea Salad Sandwich
This is one of my favorite lunches. It’s light but hearty and incredibly versatile. Switch it up and use it as a dip with chips or in a pita

*Leave out ingredients and double others, it really is up to you. Add some halved grapes for some sweetness.

Buffalo Chicken Dip I’m not really one for sports, but it does give me a good excuse to make this super easy, game day favorite.

*Chicken should NOT come in a can so I bought a roasted chicken and deboned it and used that meat instead. It tastes so much better… and isn’t from a can

*Stick it in a crock pot on low and leave it, stirring occasionally. When you’re ready to serve, leave the crockpot plugged in so it doesn’t get cold or thicken too much.

Avocado Egg Salad
As an egg fanatic, how could I not love this one? If you use a perfectly ripe avocado (do they even exist???) you get the perfect taste. Throw it on bread, pita, chips, or really any vessel to get the salad from the bowl to your mouth.

*Throw some dill in there. You won’t regret it.
